Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons (30 ml) vegetable oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1/2 cup (125 g) creamy peanut butter
  • 1/4 cup (60 ml) coconut milk
  • 2 tablespoons (30 ml) soy sauce
  • 1 tablespoon (15 ml) honey or maple syrup
  • 1 tablespoon (15 ml) lime juice
  • 1 teaspoon (5 g) red pepper flakes (optional)
  • Water, as needed for thinning the sauce

Instructions:

  1. Season chicken pieces with salt and pepper.
  2. In a large skillet, heat oil over medium-high heat.
  3. Add chicken to the skillet and cook until golden brown, about 5-7 minutes.
  4. Add minced garlic and ginger; sauté for an additional minute until fragrant.
  5. In a mixing bowl, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, and red pepper flakes.
  6. Adjust the consistency with water until sauce is smooth and creamy.
  7. Pour the peanut sauce over the sautéed chicken in the skillet.
  8. Stir to combine and heat through for an additional 2-3 minutes to meld flavors.
  9. Once heated, remove from heat and serve warm, garnished with chopped peanuts or cilantro if desired.
