Ingredients:
- 1 lb (450 g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons (30 ml) vegetable oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1-inch piece ginger, minced
- 1/2 cup (125 g) creamy peanut butter
- 1/4 cup (60 ml) coconut milk
- 2 tablespoons (30 ml) soy sauce
- 1 tablespoon (15 ml) honey or maple syrup
- 1 tablespoon (15 ml) lime juice
- 1 teaspoon (5 g) red pepper flakes (optional)
- Water, as needed for thinning the sauce
Instructions:
- Season chicken pieces with salt and pepper.
- In a large skillet, heat oil over medium-high heat.
- Add chicken to the skillet and cook until golden brown, about 5-7 minutes.
- Add minced garlic and ginger; sauté for an additional minute until fragrant.
- In a mixing bowl, whisk together peanut butter, coconut milk, soy sauce, honey, lime juice, and red pepper flakes.
- Adjust the consistency with water until sauce is smooth and creamy.
- Pour the peanut sauce over the sautéed chicken in the skillet.
- Stir to combine and heat through for an additional 2-3 minutes to meld flavors.
- Once heated, remove from heat and serve warm, garnished with chopped peanuts or cilantro if desired.
