Ingredients:

  • 1 lb (450g) imitation crab meat, sliced into ½ inch rounds or roughly chopped
  • 3 tbsp (42g) unsalted butter, divided
  • 4 cloves (20g) garlic, minced
  • 1 tbsp (15ml) fresh lemon juice
  • ½ tsp (3g) smoked paprika
  • ¼ tsp (1g) kosher salt
  • ¼ tsp (1g) cracked black pepper
  • 2 tbsp (8g) fresh parsley, chopped
  • 1 tsp (5ml) lemon zest

Instructions:

  1. Pat the imitation crab meat completely dry with paper towels to prevent steaming and ensure a proper sear.
  2. Heat 1 tbsp (14g) of butter in a 12-inch non-stick skillet or cast-iron pan over medium-high heat until foaming.
  3. Add the crab in a single layer and let sit undisturbed for 2–3 minutes until the edges are crisp and golden brown.
  4. Reduce heat to medium. Stir in the remaining 2 tbsp (28g) of butter, minced garlic, smoked paprika, salt, and pepper.
  5. Toss continuously for 60–90 seconds until the garlic is fragrant and a glossy glaze forms.
  6. Remove the pan from the heat immediately and stir in the fresh lemon juice.
  7. Garnish with chopped fresh parsley and lemon zest before serving.
