Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 tablespoons (45ml) olive oil
- 4 cloves garlic, minced
- 2 tablespoons (30ml) fresh lemon juice (about 1 medium lemon)
- Zest of 1 lemon
- Salt and freshly ground black pepper, to taste
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for serving)
- Lemon wedges (for serving)
Instructions:
- Cut chicken into bite-sized pieces, mince garlic, and zest and juice the lemon.
- In a large skillet, heat olive oil over medium-high heat until shimmering.
- Add chicken pieces in a single layer; season with salt, pepper, oregano, and red pepper flakes. Sauté for about 5-7 minutes until golden brown and cooked through.
- Lower heat to medium; add minced garlic, lemon juice, and lemon zest to the skillet. Toss until garlic is fragrant (about 1-2 minutes).
- Taste and adjust seasoning if needed. Garnish with chopped parsley and serve with lemon wedges.
