Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 3 tablespoons (45ml) olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons (30ml) fresh lemon juice (about 1 medium lemon)
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for serving)
  • Lemon wedges (for serving)

Instructions:

  1. Cut chicken into bite-sized pieces, mince garlic, and zest and juice the lemon.
  2. In a large skillet, heat olive oil over medium-high heat until shimmering.
  3. Add chicken pieces in a single layer; season with salt, pepper, oregano, and red pepper flakes. Sauté for about 5-7 minutes until golden brown and cooked through.
  4. Lower heat to medium; add minced garlic, lemon juice, and lemon zest to the skillet. Toss until garlic is fragrant (about 1-2 minutes).
  5. Taste and adjust seasoning if needed. Garnish with chopped parsley and serve with lemon wedges.
