Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, minced
- 1 medium bell pepper, sliced
- 1 medium zucchini, halved and sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1 cup spinach, washed and dried
- 1 teaspoon dried Italian herbs
- Salt and pepper, to taste
- Fresh basil or parsley, chopped for garnish
Instructions:
- Dice the onion, mince the garlic, slice the bell pepper and zucchini, and halve the cherry tomatoes.
- In a large skillet, heat olive oil over medium heat until shimmering.
- Add the diced onion and cook until translucent (3-4 minutes). Stir in minced garlic and sauté for an additional 30 seconds until fragrant.
- Add the sliced bell pepper and zucchini. Sauté until just tender (5 minutes).
- Fold in the cherry tomatoes and spinach. Cook until spinach wilts and tomatoes soften (2-3 minutes).
- Sprinkle with dried herbs, season with salt and pepper to taste, and stir well.
- Remove from heat, garnish with fresh herbs, and serve immediately.
