Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 medium bell pepper, sliced
  • 1 medium zucchini, halved and sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, washed and dried
  • 1 teaspoon dried Italian herbs
  • Salt and pepper, to taste
  • Fresh basil or parsley, chopped for garnish

Instructions:

  1. Dice the onion, mince the garlic, slice the bell pepper and zucchini, and halve the cherry tomatoes.
  2. In a large skillet, heat olive oil over medium heat until shimmering.
  3. Add the diced onion and cook until translucent (3-4 minutes). Stir in minced garlic and sauté for an additional 30 seconds until fragrant.
  4. Add the sliced bell pepper and zucchini. Sauté until just tender (5 minutes).
  5. Fold in the cherry tomatoes and spinach. Cook until spinach wilts and tomatoes soften (2-3 minutes).
  6. Sprinkle with dried herbs, season with salt and pepper to taste, and stir well.
  7. Remove from heat, garnish with fresh herbs, and serve immediately.
