Ingredients:

  • 1 cup (130g) all-purpose flour
  • 1 cup (150g) cornmeal
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (6g) salt
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) unsalted butter, melted
  • 1 cup (240g) creamed corn (canned or homemade)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Grease the baking dish with butter or cooking spray.
  3. In a large bowl, combine flour, cornmeal, baking powder, salt, and sugar. Whisk until blended.
  4. In another bowl, whisk together the egg, buttermilk, and melted butter. Stir in the creamed corn.
  5. Pour the wet mixture into the dry ingredients. Mix gently with a spatula until just combined. Be careful not to over-mix.
  6. Transfer the batter to the prepared baking dish, smoothing the top with a spatula.
  7. Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before slicing. Serve warm.
