Ingredients:
- 1 cup (130g) all-purpose flour
- 1 cup (150g) cornmeal
- 1 tablespoon (15g) baking powder
- 1 teaspoon (6g) salt
- 1/4 cup (50g) granulated sugar
- 1 large egg
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) unsalted butter, melted
- 1 cup (240g) creamed corn (canned or homemade)
Instructions:
- Preheat your oven to 400°F (200°C).
- Grease the baking dish with butter or cooking spray.
- In a large bowl, combine flour, cornmeal, baking powder, salt, and sugar. Whisk until blended.
- In another bowl, whisk together the egg, buttermilk, and melted butter. Stir in the creamed corn.
- Pour the wet mixture into the dry ingredients. Mix gently with a spatula until just combined. Be careful not to over-mix.
- Transfer the batter to the prepared baking dish, smoothing the top with a spatula.
- Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing. Serve warm.
