Ingredients:
- 1 pound (450g) fresh or frozen edamame pods, unsalted
- 2 tablespoons (30ml) olive oil
- 4 cloves garlic, minced
- 1 teaspoon (5g) red pepper flakes (or to taste)
- 1 teaspoon (5g) sea salt
- Zest of 1 lemon
- Juice of 1 lemon (about 2 tablespoons or 30ml)
- 1 tablespoon (15g) sesame seeds (optional)
- Fresh cilantro or parsley, chopped (optional)
Instructions:
- Fill a large pot with water and bring it to a boil. Add edamame pods and cook for 3-4 minutes until bright green and tender. Drain in a colander and set aside.
- In a medium skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute—be careful not to burn).
- Add drained edamame to the skillet with garlic. Toss well to coat the edamame with garlic and spices. Sprinkle with sea salt, lemon zest, and lemon juice; mix until evenly distributed.
- Transfer to a serving bowl, garnishing with sesame seeds and fresh herbs if desired. Enjoy warm or at room temperature.
