Ingredients:

  • 1 pound (450g) fresh or frozen edamame pods, unsalted
  • 2 tablespoons (30ml) olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon (5g) red pepper flakes (or to taste)
  • 1 teaspoon (5g) sea salt
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tablespoons or 30ml)
  • 1 tablespoon (15g) sesame seeds (optional)
  • Fresh cilantro or parsley, chopped (optional)

Instructions:

  1. Fill a large pot with water and bring it to a boil. Add edamame pods and cook for 3-4 minutes until bright green and tender. Drain in a colander and set aside.
  2. In a medium skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute—be careful not to burn).
  3. Add drained edamame to the skillet with garlic. Toss well to coat the edamame with garlic and spices. Sprinkle with sea salt, lemon zest, and lemon juice; mix until evenly distributed.
  4. Transfer to a serving bowl, garnishing with sesame seeds and fresh herbs if desired. Enjoy warm or at room temperature.
