Ingredients:

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs or 680 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon dried rosemary (1 g)
  • 1 teaspoon dried thyme (1 g)
  • ½ teaspoon salt (3 g)
  • ½ teaspoon black pepper (2 g)
  • Zest of 1 lemon
  • 2 tablespoons lemon juice (30 ml)
  • 1 tablespoon honey (21 g)
  • 1 teaspoon Dijon mustard (5 g)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a bowl, combine olive oil, garlic powder, rosemary, thyme, salt, and black pepper.
  4. Rub the seasoning mixture all over the chicken thighs, ensuring even coverage.
  5. If using, mix lemon juice, honey, and Dijon mustard, and marinate the chicken for 30 minutes for enhanced flavor.
  6. Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
  7. Bake in the oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
  8. Remove from oven and let the thighs rest for 5 minutes before serving.
