- 4 bone-in, skin-on chicken thighs (about 1.5 lbs or 680 g)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon dried rosemary (1 g)
- 1 teaspoon dried thyme (1 g)
- ½ teaspoon salt (3 g)
- ½ teaspoon black pepper (2 g)
- Zest of 1 lemon
- 2 tablespoons lemon juice (30 ml)
- 1 tablespoon honey (21 g)
- 1 teaspoon Dijon mustard (5 g)
Instructions:
- Preheat the oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels.
- In a bowl, combine olive oil, garlic powder, rosemary, thyme, salt, and black pepper.
- Rub the seasoning mixture all over the chicken thighs, ensuring even coverage.
- If using, mix lemon juice, honey, and Dijon mustard, and marinate the chicken for 30 minutes for enhanced flavor.
- Place the chicken thighs skin-side up on a baking sheet lined with parchment paper.
- Bake in the oven for 35-40 minutes, or until the skin is crispy and the internal temperature reaches 165°F (74°C).
- Remove from oven and let the thighs rest for 5 minutes before serving.
