Ingredients:

  • 7 oz Aged Manchego or Sharp Cheddar, sliced into triangles
  • 8 oz wheel of Double-Cream Brie or Camembert
  • 4 oz Gorgonzola or Goat Cheese log
  • 4 oz thinly sliced Prosciutto di Parma
  • 5 oz Genoa Salami or Sopressata
  • 3 oz sliced Chorizo or Pepperoni
  • 6 oz assorted crackers
  • 1 small baguette, sliced and lightly toasted
  • 0.5 cup Marcona almonds or candied walnuts
  • 1 cup green or red grapes
  • 0.5 cup fresh raspberries
  • 0.25 cup dried apricots or figs
  • 0.5 cup Castelvetrano olives
  • 0.25 cup cornichons
  • 0.25 cup fig jam or honey

Instructions:

  1. Anchor the Board: Place small ceramic ramekins containing olives, jam, and cornichons on the board first, spacing them unevenly to create visual anchors.
  2. Position the Cheeses: Place the three cheese varieties in different zones of the board. Leave the Brie whole with a small wedge removed, and fan out the Manchego triangles.
  3. Create the Salami River: Fold salami slices into quarters and tuck them tightly together in a curving line across the board. Drape prosciutto in loose, textured ribbons.
  4. Add Carbs and Fruit: Fill remaining large gaps with stacks of crackers and toasted baguette slices. Place grape clusters near complementary cheeses.
  5. Final Garnish: Fill small remaining voids with almonds, dried fruit, and raspberries to ensure a lush, bountiful aesthetic.
