Ingredients:
- 4 halibut fillets (6 oz each or 170 g)
- Salt and pepper, to taste
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon olive oil (15 ml)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes (400 g)
- 1 teaspoon dried oregano (5 g)
- 1 teaspoon red pepper flakes (optional, 5 g)
- 1 tablespoon fresh basil, chopped (15 g)
- Zest of 1 lemon
Instructions:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Sauté diced onion until translucent (about 3-4 minutes).
- Add minced garlic, cooking for 1 more minute until fragrant.
- Stir in crushed tomatoes, oregano, red pepper flakes, and season with salt and pepper.
- Simmer for 10 minutes, allowing flavors to meld.
- Stir in fresh basil and lemon zest. Taste and adjust seasoning if necessary. Set aside.
- Season halibut fillets with salt and pepper on both sides.
- In a separate pan, heat 2 tablespoons of olive oil over medium-high heat.
- Carefully add halibut to the pan. Sear for 4-5 minutes on each side until golden brown and internal temperature reaches 145°F (63°C).
- Spoon the marinara sauce onto plates, top with seared halibut. Serve immediately.
