Ingredients:

  • 4 halibut fillets (6 oz each or 170 g)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes (400 g)
  • 1 teaspoon dried oregano (5 g)
  • 1 teaspoon red pepper flakes (optional, 5 g)
  • 1 tablespoon fresh basil, chopped (15 g)
  • Zest of 1 lemon

Instructions:

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Sauté diced onion until translucent (about 3-4 minutes).
  3. Add minced garlic, cooking for 1 more minute until fragrant.
  4. Stir in crushed tomatoes, oregano, red pepper flakes, and season with salt and pepper.
  5. Simmer for 10 minutes, allowing flavors to meld.
  6. Stir in fresh basil and lemon zest. Taste and adjust seasoning if necessary. Set aside.
  7. Season halibut fillets with salt and pepper on both sides.
  8. In a separate pan, heat 2 tablespoons of olive oil over medium-high heat.
  9. Carefully add halibut to the pan. Sear for 4-5 minutes on each side until golden brown and internal temperature reaches 145°F (63°C).
  10. Spoon the marinara sauce onto plates, top with seared halibut. Serve immediately.
