Ingredients:

  • 1 large ripe Hass avocado (approx. 180 g), peeled and pitted
  • 1/2 cup (120 ml) full-fat buttermilk
  • 1/3 cup (80 g) full-fat mayonnaise
  • 1/4 cup (60 g) plain, full-fat Greek yogurt or sour cream
  • 1 Tbsp (15 ml) freshly squeezed lime or lemon juice
  • 1–3 Tbsp (15–45 ml) water (optional, for consistency)
  • 3 Tbsp (15 g) fresh flat-leaf parsley, finely chopped
  • 2 Tbsp (10 g) fresh chives, finely minced
  • 1 Tbsp (5 g) fresh dill, finely chopped (optional)
  • 1/2 tsp (2.5 ml) garlic powder
  • 1/2 tsp (2.5 ml) onion powder
  • 1/2 tsp (2.5 ml) sea salt, or to taste
  • 1/4 tsp (1.25 ml) freshly ground black pepper, or to taste
  • Pinch of cayenne (optional)

Instructions:

  1. Prepare the Avocado: Cut the avocado in half, remove the stone, and scoop the flesh directly into the blender jug or food processor bowl.
  2. Add Wet Ingredients: Pour in the buttermilk, mayonnaise, Greek yogurt (or sour cream), and lime juice.
  3. Add Dry Seasoning: Add the garlic powder, onion powder, salt, pepper, and cayenne (if using).
  4. Initial Blend: Secure the lid and blend on medium-high speed until the mixture is completely smooth and uniform in color. Scrape down the sides of the jug once or twice to ensure no lumps remain.
  5. Adjust Consistency: If a thinner dressing is desired, pulse in the optional water, 1 tablespoon at a time, until the desired pourable consistency is reached. (Note: it will thicken slightly upon chilling.)
  6. Fold in Fresh Herbs: Transfer the mixture from the blender to a medium bowl. Gently stir in the finely chopped fresh parsley, chives, and dill. Stirring the fresh herbs in after blending preserves their colour, texture, and bright flavour.
  7. Taste and Adjust: Check the seasoning. Add more salt, lime juice, or pepper as needed to lift the flavor profile.
  8. Chill: Cover the bowl tightly or transfer to an airtight container. Refrigerate for a minimum of 30 minutes. This chilling time allows the herbs to release their oils and the dressing to set slightly.
  9. Serve: Just before serving, give the dip a quick stir. If it has thickened too much, add a tiny splash of water or buttermilk to loosen it.
