Ingredients:
- 1 large ripe Hass avocado (approx. 180 g), peeled and pitted
- 1/2 cup (120 ml) full-fat buttermilk
- 1/3 cup (80 g) full-fat mayonnaise
- 1/4 cup (60 g) plain, full-fat Greek yogurt or sour cream
- 1 Tbsp (15 ml) freshly squeezed lime or lemon juice
- 1–3 Tbsp (15–45 ml) water (optional, for consistency)
- 3 Tbsp (15 g) fresh flat-leaf parsley, finely chopped
- 2 Tbsp (10 g) fresh chives, finely minced
- 1 Tbsp (5 g) fresh dill, finely chopped (optional)
- 1/2 tsp (2.5 ml) garlic powder
- 1/2 tsp (2.5 ml) onion powder
- 1/2 tsp (2.5 ml) sea salt, or to taste
- 1/4 tsp (1.25 ml) freshly ground black pepper, or to taste
- Pinch of cayenne (optional)
Instructions:
- Prepare the Avocado: Cut the avocado in half, remove the stone, and scoop the flesh directly into the blender jug or food processor bowl.
- Add Wet Ingredients: Pour in the buttermilk, mayonnaise, Greek yogurt (or sour cream), and lime juice.
- Add Dry Seasoning: Add the garlic powder, onion powder, salt, pepper, and cayenne (if using).
- Initial Blend: Secure the lid and blend on medium-high speed until the mixture is completely smooth and uniform in color. Scrape down the sides of the jug once or twice to ensure no lumps remain.
- Adjust Consistency: If a thinner dressing is desired, pulse in the optional water, 1 tablespoon at a time, until the desired pourable consistency is reached. (Note: it will thicken slightly upon chilling.)
- Fold in Fresh Herbs: Transfer the mixture from the blender to a medium bowl. Gently stir in the finely chopped fresh parsley, chives, and dill. Stirring the fresh herbs in after blending preserves their colour, texture, and bright flavour.
- Taste and Adjust: Check the seasoning. Add more salt, lime juice, or pepper as needed to lift the flavor profile.
- Chill: Cover the bowl tightly or transfer to an airtight container. Refrigerate for a minimum of 30 minutes. This chilling time allows the herbs to release their oils and the dressing to set slightly.
- Serve: Just before serving, give the dip a quick stir. If it has thickened too much, add a tiny splash of water or buttermilk to loosen it.
