Ingredients:
- 1 cup dried lotus seeds (150g)
- 4 cups water (960ml)
- 1/2 teaspoon salt (2g)
- 1/3 cup honey (115g)
- 1 tablespoon goji berries (optional, for garnish)
- 1-2 teaspoons lemon juice (10-10ml, adjust to taste)
- 1/2 teaspoon vanilla extract (2g, optional)
Instructions:
- Rinse lotus seeds under cold water, then soak them in water for at least 30 minutes or until softened.
- In a medium pot, combine 4 cups of water with 1/2 teaspoon of salt. Bring to a boil.
- Drain soaked lotus seeds and add them to the boiling water. Reduce heat to a gentle simmer and cover. Cook for about 30 minutes, or until tender but still slightly firm.
- In a separate small bowl, combine honey, lemon juice, and vanilla extract (if using). Stir well.
- Once lotus seeds are tender, drain any excess water if needed. Pour the sweet honey mixture over the lotus seeds and gently combine.
- Transfer to serving bowls. Garnish with goji berries if desired. Enjoy warm or at room temperature.
