Ingredients:

  • 1 cup dried lotus seeds (150g)
  • 4 cups water (960ml)
  • 1/2 teaspoon salt (2g)
  • 1/3 cup honey (115g)
  • 1 tablespoon goji berries (optional, for garnish)
  • 1-2 teaspoons lemon juice (10-10ml, adjust to taste)
  • 1/2 teaspoon vanilla extract (2g, optional)

Instructions:

  1. Rinse lotus seeds under cold water, then soak them in water for at least 30 minutes or until softened.
  2. In a medium pot, combine 4 cups of water with 1/2 teaspoon of salt. Bring to a boil.
  3. Drain soaked lotus seeds and add them to the boiling water. Reduce heat to a gentle simmer and cover. Cook for about 30 minutes, or until tender but still slightly firm.
  4. In a separate small bowl, combine honey, lemon juice, and vanilla extract (if using). Stir well.
  5. Once lotus seeds are tender, drain any excess water if needed. Pour the sweet honey mixture over the lotus seeds and gently combine.
  6. Transfer to serving bowls. Garnish with goji berries if desired. Enjoy warm or at room temperature.
