Ingredients:
- 1 lb (450g) imitation crab meat, flaked
- 2 stalks (100g) celery, finely diced
- 1/2 cup (60g) English cucumber, peeled and finely diced
- 2 tbsp (8g) fresh parsley, chopped
- 1/2 cup (115g) mayonnaise
- 1 tbsp (15ml) fresh lemon juice
- 1/2 tsp (3g) salt
- 1/4 tsp (1g) black pepper
- 1/4 tsp (1g) smoked paprika
Instructions:
- Dice the celery and cucumber into uniform, small pieces.
- Using your hands or a fork, gently flake the imitation crab into bite-sized shreds.
- In a small bowl, whisk together the mayonnaise, lemon juice, salt, pepper, and paprika until the mixture is smooth and the paprika is fully incorporated.
- Combine the crab, celery, cucumber, and parsley in a large mixing bowl. Pour the dressing over the top and gently fold everything together with a spatula until the ingredients are coated.
