Ingredients:

  • 1 lb (450g) imitation crab meat, flaked
  • 2 stalks (100g) celery, finely diced
  • 1/2 cup (60g) English cucumber, peeled and finely diced
  • 2 tbsp (8g) fresh parsley, chopped
  • 1/2 cup (115g) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/4 tsp (1g) smoked paprika

Instructions:

  1. Dice the celery and cucumber into uniform, small pieces.
  2. Using your hands or a fork, gently flake the imitation crab into bite-sized shreds.
  3. In a small bowl, whisk together the mayonnaise, lemon juice, salt, pepper, and paprika until the mixture is smooth and the paprika is fully incorporated.
  4. Combine the crab, celery, cucumber, and parsley in a large mixing bowl. Pour the dressing over the top and gently fold everything together with a spatula until the ingredients are coated.
