Ingredients:

  • 1/4 cup (60 ml) extra virgin olive oil
  • 2 tablespoons (30 ml) lemon juice (about 1 lemon)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 large head of cauliflower (about 1.5 lbs or 680 g)
  • Optional: Fresh herbs (such as parsley or cilantro) for garnishing

Instructions:

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper until well combined.
  2. Remove the outer leaves from the cauliflower and trim the stem. Place the cauliflower core-side down and slice into 1-inch thick steaks.
  3. Brush each cauliflower steak with the marinade generously, ensuring all sides are coated. Let marinate for at least 15 minutes.
  4. Heat the grill to medium-high (about 400°F or 200°C). Oil the grill grates if necessary to prevent sticking.
  5. Place the cauliflower steaks on the grill and cook for 5-7 minutes on each side, or until grill marks form and the cauliflower is tender but still holding its shape.
  6. Remove from the grill and garnish with fresh herbs if using. Enjoy warm with your favorite sides.
