Ingredients:
- 1 pound (450g) sirloin steak, thinly sliced against the grain
- 2 tablespoons (30ml) soy sauce, low sodium
- 1 tablespoon (15ml) cornstarch (cornflour)
- 1 tablespoon (15ml) Shaoxing wine (or dry sherry)
- 1 teaspoon (5ml) sesame oil
- 1/2 teaspoon (2.5ml) ground black pepper
- 1/4 cup (60ml) beef broth (or chicken broth)
- 2 tablespoons (30ml) soy sauce, low sodium
- 2 tablespoons (30ml) oyster sauce
- 1 tablespoon (15ml) brown sugar, packed
- 1 tablespoon (15ml) rice vinegar
- 1 teaspoon (5ml) sesame oil
- 1/2 teaspoon (2.5ml) ground white pepper
- 1 tablespoon (15ml) cornstarch (cornflour)
- 2 tablespoons (30ml) vegetable oil (or peanut oil)
- 2 cloves garlic, minced
- 1 inch (2.5cm) ginger, peeled and minced
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- Optional: 1/2 teaspoon (2.5ml) red pepper flakes, for heat
- Cooked rice, for serving
- Optional: Sesame seeds and sliced green onions, for garnish
Instructions:
- In a large bowl, whisk together the marinade ingredients. Add the sliced beef and toss to coat. Let marinate for at least 15 minutes (or up to 2 hours in the refrigerator).
- In a small bowl, whisk together all the sauce ingredients until smooth. Set aside.
- Heat the vegetable oil in a wok or large skillet over high heat until shimmering.
- Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds, until fragrant (be careful not to burn).
- Add the marinated beef to the wok in a single layer (work in batches if necessary to avoid overcrowding). Stir-fry until browned on all sides and cooked through, about 2-3 minutes. Remove the beef from the wok and set aside.
- Add the sliced onion and bell peppers to the wok. Stir-fry until tender-crisp, about 3-5 minutes. Add red pepper flakes (if using).
- Pour the prepared sauce over the vegetables. Bring to a simmer and cook until the sauce thickens, about 1-2 minutes.
- Return the cooked beef to the wok and toss to coat with the sauce. Heat through.
