Ingredients:

  • 1 pound (450g) sirloin steak, thinly sliced against the grain
  • 2 tablespoons (30ml) soy sauce, low sodium
  • 1 tablespoon (15ml) cornstarch (cornflour)
  • 1 tablespoon (15ml) Shaoxing wine (or dry sherry)
  • 1 teaspoon (5ml) sesame oil
  • 1/2 teaspoon (2.5ml) ground black pepper
  • 1/4 cup (60ml) beef broth (or chicken broth)
  • 2 tablespoons (30ml) soy sauce, low sodium
  • 2 tablespoons (30ml) oyster sauce
  • 1 tablespoon (15ml) brown sugar, packed
  • 1 tablespoon (15ml) rice vinegar
  • 1 teaspoon (5ml) sesame oil
  • 1/2 teaspoon (2.5ml) ground white pepper
  • 1 tablespoon (15ml) cornstarch (cornflour)
  • 2 tablespoons (30ml) vegetable oil (or peanut oil)
  • 2 cloves garlic, minced
  • 1 inch (2.5cm) ginger, peeled and minced
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • Optional: 1/2 teaspoon (2.5ml) red pepper flakes, for heat
  • Cooked rice, for serving
  • Optional: Sesame seeds and sliced green onions, for garnish

Instructions:

  1. In a large bowl, whisk together the marinade ingredients. Add the sliced beef and toss to coat. Let marinate for at least 15 minutes (or up to 2 hours in the refrigerator).
  2. In a small bowl, whisk together all the sauce ingredients until smooth. Set aside.
  3. Heat the vegetable oil in a wok or large skillet over high heat until shimmering.
  4. Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds, until fragrant (be careful not to burn).
  5. Add the marinated beef to the wok in a single layer (work in batches if necessary to avoid overcrowding). Stir-fry until browned on all sides and cooked through, about 2-3 minutes. Remove the beef from the wok and set aside.
  6. Add the sliced onion and bell peppers to the wok. Stir-fry until tender-crisp, about 3-5 minutes. Add red pepper flakes (if using).
  7. Pour the prepared sauce over the vegetables. Bring to a simmer and cook until the sauce thickens, about 1-2 minutes.
  8. Return the cooked beef to the wok and toss to coat with the sauce. Heat through.
