Ingredients:
- 4 tablespoons (60ml) good quality extra virgin olive oil (Spanish olive oil preferred)
- 4 cloves garlic, finely sliced
- ½ teaspoon red pepper flakes (chilli flakes)
- 200g (7oz) raw prawns, peeled and deveined
- Salt and freshly ground black pepper, to taste
- Juice of ½ lemon (plus 2 lemon wedges for garnish)
- 1 teaspoon smoked paprika
- 1 tablespoon finely chopped fresh parsley
Instructions:
- Combine olive oil, garlic slices, and chilli flakes in a cold pan.
- Gently heat the oil over medium heat until it begins to sizzle. Cook the garlic for about 1 minute, being careful not to burn it.
- Add the prawns to the pan and increase the heat slightly to bring the oil back to a sizzle.
- Cook the prawns for 3-4 minutes, stirring occasionally, until they turn pink and opaque.
- Season with salt and pepper. Squeeze lemon juice over the prawns.
- Sprinkle with paprika and parsley. Serve immediately, while the prawns are still sizzling, with crusty bread and lemon wedges.
