Ingredients:

  • 4 tablespoons (60ml) good quality extra virgin olive oil (Spanish olive oil preferred)
  • 4 cloves garlic, finely sliced
  • ½ teaspoon red pepper flakes (chilli flakes)
  • 200g (7oz) raw prawns, peeled and deveined
  • Salt and freshly ground black pepper, to taste
  • Juice of ½ lemon (plus 2 lemon wedges for garnish)
  • 1 teaspoon smoked paprika
  • 1 tablespoon finely chopped fresh parsley

Instructions:

  1. Combine olive oil, garlic slices, and chilli flakes in a cold pan.
  2. Gently heat the oil over medium heat until it begins to sizzle. Cook the garlic for about 1 minute, being careful not to burn it.
  3. Add the prawns to the pan and increase the heat slightly to bring the oil back to a sizzle.
  4. Cook the prawns for 3-4 minutes, stirring occasionally, until they turn pink and opaque.
  5. Season with salt and pepper. Squeeze lemon juice over the prawns.
  6. Sprinkle with paprika and parsley. Serve immediately, while the prawns are still sizzling, with crusty bread and lemon wedges.
