Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes, with juices
- 1 can kidney beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup beef broth
- 1 tablespoon lime juice (optional)
Instructions:
- Heat olive oil in a large skillet over medium-high heat.
- Add beef cubes in batches, sear until browned on all sides, and transfer to slow cooker.
- In the same skillet, add onion and bell pepper; sauté until softened, about 5 minutes.
- Stir in garlic and cook for another minute until fragrant.
- Add the sautéed mixture to the slow cooker with beef.
- Stir in diced tomatoes, beans, chili powder, cumin, smoked paprika, oregano, and beef broth.
- Season with salt and pepper, then cover the slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Before serving, stir in lime juice for brightness.
- Adjust seasoning if needed.
