Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes, with juices
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup beef broth
  • 1 tablespoon lime juice (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add beef cubes in batches, sear until browned on all sides, and transfer to slow cooker.
  3. In the same skillet, add onion and bell pepper; sauté until softened, about 5 minutes.
  4. Stir in garlic and cook for another minute until fragrant.
  5. Add the sautéed mixture to the slow cooker with beef.
  6. Stir in diced tomatoes, beans, chili powder, cumin, smoked paprika, oregano, and beef broth.
  7. Season with salt and pepper, then cover the slow cooker.
  8. Cook on low for 6-8 hours or high for 3-4 hours.
  9. Before serving, stir in lime juice for brightness.
  10. Adjust seasoning if needed.
