Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 4 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tsp dried oregano
- 1/2 tsp dried thyme
Instructions:
- Season the chicken thighs evenly with salt and pepper.
- Heat olive oil in a pan over medium high heat.
- Sear thighs for 3 minutes per side until golden brown and sizzling.
- Transfer the seared chicken to the slow cooker.
- In a small bowl, whisk together the balsamic vinegar, honey, soy sauce, minced garlic, oregano, and thyme.
- Pour the mixture evenly over the chicken in the slow cooker. Note: Make sure all meat is coated.
- Cover and cook on Low for 6-7 hours or High for 3-4 hours until the meat reaches 175°F (79°C).
- Carefully remove the chicken to a platter.
- Pour the remaining liquid into a small saucepan and simmer over medium heat for 5-8 minutes until it thickens into a glossy glaze.
- Drizzle the reduced sauce back over the chicken.
