Ingredients:

  • 2 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 4 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme

Instructions:

  1. Season the chicken thighs evenly with salt and pepper.
  2. Heat olive oil in a pan over medium high heat.
  3. Sear thighs for 3 minutes per side until golden brown and sizzling.
  4. Transfer the seared chicken to the slow cooker.
  5. In a small bowl, whisk together the balsamic vinegar, honey, soy sauce, minced garlic, oregano, and thyme.
  6. Pour the mixture evenly over the chicken in the slow cooker. Note: Make sure all meat is coated.
  7. Cover and cook on Low for 6-7 hours or High for 3-4 hours until the meat reaches 175°F (79°C).
  8. Carefully remove the chicken to a platter.
  9. Pour the remaining liquid into a small saucepan and simmer over medium heat for 5-8 minutes until it thickens into a glossy glaze.
  10. Drizzle the reduced sauce back over the chicken.
