Ingredients:
- 2 pounds Italian sausages
- 2 large onions, thinly sliced
- 3 bell peppers (red, yellow, orange), sliced
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Brown sausages on all sides. This adds extra flavour but isn't essential.
- Slice onions and peppers. Mince the garlic.
- Place the sliced onions in the bottom of the slow cooker. Top with the sliced peppers. Place the browned (or raw) sausages on top of the vegetables.
- In a bowl, combine crushed tomatoes, tomato sauce, minced garlic, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Pour the mixture over the sausages and vegetables.
- Cover and cook on Low for 6-8 hours or on High for 4-6 hours, or until the sausages are cooked through and the vegetables are tender.
- Garnish with fresh parsley and serve hot.
