Ingredients:

  • 2 pounds Italian sausages
  • 2 large onions, thinly sliced
  • 3 bell peppers (red, yellow, orange), sliced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Brown sausages on all sides. This adds extra flavour but isn't essential.
  2. Slice onions and peppers. Mince the garlic.
  3. Place the sliced onions in the bottom of the slow cooker. Top with the sliced peppers. Place the browned (or raw) sausages on top of the vegetables.
  4. In a bowl, combine crushed tomatoes, tomato sauce, minced garlic, oregano, basil, and red pepper flakes (if using). Season with salt and pepper. Pour the mixture over the sausages and vegetables.
  5. Cover and cook on Low for 6-8 hours or on High for 4-6 hours, or until the sausages are cooked through and the vegetables are tender.
  6. Garnish with fresh parsley and serve hot.
