Ingredients:
- 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon salt (5g)
- 1 teaspoon black pepper (5g)
- 1 tablespoon dried thyme (6g)
- 1 tablespoon dried rosemary (6g)
- 1 tablespoon dried parsley (6g)
- 1 medium onion, chopped (150g)
- 3 cloves garlic, minced
- 2 large carrots, sliced (250g)
- 2 ribs celery, chopped (150g)
- 1 cup chicken broth (240ml)
- Juice of 1 lemon
Instructions:
- Season chicken breasts with salt, black pepper, and olive oil.
- In a small bowl, combine thyme, rosemary, and parsley. Mix well.
- Chop onion, mince garlic, slice carrots, and chop celery.
- Place chopped vegetables at the bottom of the slow cooker.
- Lay seasoned chicken breasts over the vegetables.
- Pour chicken broth and lemon juice over everything.
- Sprinkle the mixed herbs on top.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is cooked through.
- Remove chicken and vegetables, let rest briefly, then slice and serve warm.
