Ingredients:

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon salt (5g)
  • 1 teaspoon black pepper (5g)
  • 1 tablespoon dried thyme (6g)
  • 1 tablespoon dried rosemary (6g)
  • 1 tablespoon dried parsley (6g)
  • 1 medium onion, chopped (150g)
  • 3 cloves garlic, minced
  • 2 large carrots, sliced (250g)
  • 2 ribs celery, chopped (150g)
  • 1 cup chicken broth (240ml)
  • Juice of 1 lemon

Instructions:

  1. Season chicken breasts with salt, black pepper, and olive oil.
  2. In a small bowl, combine thyme, rosemary, and parsley. Mix well.
  3. Chop onion, mince garlic, slice carrots, and chop celery.
  4. Place chopped vegetables at the bottom of the slow cooker.
  5. Lay seasoned chicken breasts over the vegetables.
  6. Pour chicken broth and lemon juice over everything.
  7. Sprinkle the mixed herbs on top.
  8. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the chicken is cooked through.
  9. Remove chicken and vegetables, let rest briefly, then slice and serve warm.
