Ingredients:
- 4 (6 oz) boneless, skinless chicken breasts (about 1 kg)
- 1 teaspoon salt (5 g)
- ½ teaspoon black pepper (2 g)
- 1 tablespoon olive oil (15 ml)
- 2 teaspoons dried thyme (2 g)
- 2 teaspoons dried rosemary (2 g)
- 4 cloves garlic, minced
- 2 medium carrots, chopped
- 2 medium potatoes, cubed
- 1 medium onion, sliced
- 1 cup green beans, trimmed (about 100 g)
- 1 cup low-sodium chicken broth (240 ml)
Instructions:
- Season chicken breasts with salt, pepper, olive oil, thyme, rosemary, and garlic in a bowl.
- Place chopped carrots, potatoes, and onion at the bottom of the slow cooker.
- Place the seasoned chicken on top of the vegetables.
- Add the chicken broth to the slow cooker.
- Cover and set the slow cooker to low for 6-8 hours or high for 4 hours.
- 30 minutes before serving, add green beans to the slow cooker.
- Shred the chicken with two forks and mix it with vegetables before serving.
