Ingredients:

  • 4 (6 oz) boneless, skinless chicken breasts (about 1 kg)
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • 1 tablespoon olive oil (15 ml)
  • 2 teaspoons dried thyme (2 g)
  • 2 teaspoons dried rosemary (2 g)
  • 4 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 medium potatoes, cubed
  • 1 medium onion, sliced
  • 1 cup green beans, trimmed (about 100 g)
  • 1 cup low-sodium chicken broth (240 ml)

Instructions:

  1. Season chicken breasts with salt, pepper, olive oil, thyme, rosemary, and garlic in a bowl.
  2. Place chopped carrots, potatoes, and onion at the bottom of the slow cooker.
  3. Place the seasoned chicken on top of the vegetables.
  4. Add the chicken broth to the slow cooker.
  5. Cover and set the slow cooker to low for 6-8 hours or high for 4 hours.
  6. 30 minutes before serving, add green beans to the slow cooker.
  7. Shred the chicken with two forks and mix it with vegetables before serving.
