Ingredients:
- 1 cup (120g) all-purpose flour
- 1 cup (160g) yellow cornmeal
- 1/4 cup (50g) granulated sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground black pepper
- 1 large egg
- 1 cup (240ml) buttermilk
- 2 tablespoons (30ml) vegetable oil (plus more for frying)
- 1/4 cup finely chopped yellow onion
- Vegetable oil (for deep frying)
Instructions:
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Maintain this temperature throughout the cooking process.
- In a large mixing bowl, whisk together flour, cornmeal, sugar, baking powder, salt, baking soda, and pepper.
- In a separate bowl, whisk together egg, buttermilk, and 2 tablespoons of vegetable oil.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix. Gently fold in the chopped onion.
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the fryer.
- Fry for 2-3 minutes per side, or until golden brown and cooked through. Turn occasionally to ensure even browning.
- Remove hush puppies from the oil with a slotted spoon or spider and place on a paper towel-lined plate to drain excess oil. Serve immediately.
