Ingredients:

  • 4 slices of sourdough bread
  • 4 oz (113g) sharp cheddar cheese, grated
  • 4 oz (113g) aged white cheddar cheese, grated
  • 2 oz (56g) Old Bay seasoned crab meat, drained
  • 2 tbsp unsalted butter, softened
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions:

  1. In a small bowl, mix the softened butter, mayonnaise, Dijon mustard, salt, and pepper until well combined to create a spread.
  2. Lay out two slices of sourdough bread and spread the butter mixture on one side of each slice.
  3. Sprinkle half of the grated sharp cheddar and half of the aged white cheddar over the unbuttered side of one slice.
  4. Distribute the crab meat over the cheese, then top with the remaining cheese and cover with the second slice of bread, buttered side out.
  5. Preheat a skillet or griddle over medium heat.
  6. Place the sandwich in the pan and cook for 3-4 minutes or until golden brown. Flip and cook the other side for another 3-4 minutes until golden brown and cheese is melted.
  7. Remove from heat, let sit for a minute before slicing, and serve warm.
