Ingredients:

  • 300 g spaghetti
  • 1 tablespoon olive oil
  • 4 cloves garlic, grated or crushed
  • ½-1 teaspoon dried chili flakes, or to taste
  • 400 g tin chopped tomatoes or passata
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper, or to taste
  • 2 tablespoons fresh parsley or basil, chopped (plus extra for garnish)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the spaghetti according to package instructions until al dente. Drain and reserve some pasta water.
  2. In a medium frying pan, heat olive oil over low heat. Add grated or crushed garlic and dried chili flakes; sauté for 1 minute, stirring frequently.
  3. Pour in the chopped tomatoes, add salt and pepper, and raise the heat to bring to a boil. Once boiling, reduce heat and simmer for 10 minutes.
  4. Add the drained spaghetti to the sauce along with 1-2 tablespoons of reserved pasta water and chopped parsley or basil. Mix thoroughly.
  5. Plate the pasta, and sprinkle with grated Parmesan and extra herbs if desired. Enjoy!
