Ingredients:
- 300 g spaghetti
- 1 tablespoon olive oil
- 4 cloves garlic, grated or crushed
- ½-1 teaspoon dried chili flakes, or to taste
- 400 g tin chopped tomatoes or passata
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper, or to taste
- 2 tablespoons fresh parsley or basil, chopped (plus extra for garnish)
- Grated Parmesan cheese (optional)
Instructions:
- Cook the spaghetti according to package instructions until al dente. Drain and reserve some pasta water.
- In a medium frying pan, heat olive oil over low heat. Add grated or crushed garlic and dried chili flakes; sauté for 1 minute, stirring frequently.
- Pour in the chopped tomatoes, add salt and pepper, and raise the heat to bring to a boil. Once boiling, reduce heat and simmer for 10 minutes.
- Add the drained spaghetti to the sauce along with 1-2 tablespoons of reserved pasta water and chopped parsley or basil. Mix thoroughly.
- Plate the pasta, and sprinkle with grated Parmesan and extra herbs if desired. Enjoy!
