Ingredients:

  • 4 cups raw carrots, grated (about 1 lb or 450g)
  • 1/2 cup red bell pepper, finely chopped (about 1 medium pepper)
  • 1/4 cup green onions, sliced (about 2-3 green onions)
  • 3 tablespoons olive oil (45ml)
  • 2 tablespoons rice vinegar (30ml)
  • 1 tablespoon soy sauce (15ml)
  • 1 tablespoon honey or maple syrup (15ml)
  • 1 teaspoon sriracha or chili paste (5ml)
  • Salt and pepper to taste

Instructions:

  1. Grate the raw carrots using a box grater or food processor.
  2. Finely chop the red bell pepper and slice the green onions.
  3. In a mixing bowl, whisk together olive oil, rice vinegar, soy sauce, honey (or maple syrup), sriracha, and season with salt and pepper until well combined.
  4. In a large bowl, add the grated carrots, red bell pepper, and green onions.
  5. Pour the dressing over the vegetable mixture and toss until all ingredients are evenly coated.
  6. Taste the salad and adjust seasoning if necessary, adding more sriracha for heat or honey for sweetness.
  7. Transfer the salad to a serving bowl and enjoy immediately or refrigerate for 30 minutes to enhance flavors.
