Ingredients:
- 4 cups raw carrots, grated (about 1 lb or 450g)
- 1/2 cup red bell pepper, finely chopped (about 1 medium pepper)
- 1/4 cup green onions, sliced (about 2-3 green onions)
- 3 tablespoons olive oil (45ml)
- 2 tablespoons rice vinegar (30ml)
- 1 tablespoon soy sauce (15ml)
- 1 tablespoon honey or maple syrup (15ml)
- 1 teaspoon sriracha or chili paste (5ml)
- Salt and pepper to taste
Instructions:
- Grate the raw carrots using a box grater or food processor.
- Finely chop the red bell pepper and slice the green onions.
- In a mixing bowl, whisk together olive oil, rice vinegar, soy sauce, honey (or maple syrup), sriracha, and season with salt and pepper until well combined.
- In a large bowl, add the grated carrots, red bell pepper, and green onions.
- Pour the dressing over the vegetable mixture and toss until all ingredients are evenly coated.
- Taste the salad and adjust seasoning if necessary, adding more sriracha for heat or honey for sweetness.
- Transfer the salad to a serving bowl and enjoy immediately or refrigerate for 30 minutes to enhance flavors.
