Ingredients:

  • 2 medium delicata squash, approx 2 lbs (900g), halved lengthwise and seeded
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Using a sharp chef's knife, slice the seeded delicata squash halves into 1/2-inch (1.3cm) wide rings.
  2. In a large mixing bowl, whisk together the olive oil, maple syrup, smoked paprika, cayenne pepper, garlic powder, kosher salt, and cracked black pepper.
  3. Add the squash rings to the bowl and toss gently until every piece is glistening and fully coated in the spice mixture.
  4. Spread the rings in a single layer on a parchment-lined heavy-duty rimmed baking sheet, ensuring they do not touch to allow for roasting.
  5. Bake for 15 minutes, flip the rings with tongs, and roast for another 10-15 minutes until they are mahogany-colored and slightly charred on the edges.
