Ingredients:
- 2 medium delicata squash, approx 2 lbs (900g), halved lengthwise and seeded
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Using a sharp chef's knife, slice the seeded delicata squash halves into 1/2-inch (1.3cm) wide rings.
- In a large mixing bowl, whisk together the olive oil, maple syrup, smoked paprika, cayenne pepper, garlic powder, kosher salt, and cracked black pepper.
- Add the squash rings to the bowl and toss gently until every piece is glistening and fully coated in the spice mixture.
- Spread the rings in a single layer on a parchment-lined heavy-duty rimmed baking sheet, ensuring they do not touch to allow for roasting.
- Bake for 15 minutes, flip the rings with tongs, and roast for another 10-15 minutes until they are mahogany-colored and slightly charred on the edges.
