Ingredients:
- 8 oz (225g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 cups (480ml) whipped topping, thawed
- 2 cups (300g) fresh strawberries, hulled and diced
- 2 medium bananas, sliced
- 1 cup (30g) mini marshmallows
Instructions:
- Place softened cream cheese, powdered sugar, and vanilla extract in a bowl.
- Beat on medium high speed until the mixture is completely smooth and free of lumps. Note: If it's still lumpy, keep going for another minute.
- Measure out your thawed whipped topping.
- Using a silicone spatula, gently fold the whipped topping into the cream cheese.
- Use a cut and lift motion until no white streaks remain. Note: Don't stir in circles, or you'll lose the air.
- Add the diced strawberries, sliced bananas, and mini marshmallows.
- Fold gently until the fruit is just distributed. Note: Stop immediately to avoid bruising the bananas.
- Transfer the mixture to an airtight glass container.
- Chill in the refrigerator for 2 hours until firm and cold.
