Ingredients:
- 8 oz cream cheese, softened
- 1 large egg
- 1/4 cup granulated sugar
- 1 tsp vanilla extract
- 21 oz strawberry pie filling
- 1 cup fresh strawberries, sliced
- 15.25 oz yellow cake mix
- 1/2 cup graham cracker crumbs
- 3/4 cup unsalted butter, chilled and sliced into thin pats
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
- Spread the 21 oz strawberry pie filling across the bottom of the prepared dish. Evenly scatter the 1 cup of sliced fresh strawberries over the filling.
- In a medium mixing bowl, use a hand mixer to beat the 8 oz softened cream cheese, 1 egg, 1/4 cup granulated sugar, and 1 tsp vanilla extract until smooth and aerated.
- Drop spoonfuls of the cheesecake mixture evenly over the strawberry layer.
- In a small bowl, whisk together the 15.25 oz yellow cake mix and 1/2 cup graham cracker crumbs. Sprinkle this mixture uniformly over the fruit and cheesecake layers.
- Place the 3/4 cup of chilled butter pats across the entire surface of the cake mix, ensuring maximum coverage to avoid dry spots.
- Bake for 45 minutes, or until the top is golden brown and the fruit filling is bubbling at the edges.
