Ingredients:

  • 8 oz cream cheese, softened
  • 1 large egg
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 21 oz strawberry pie filling
  • 1 cup fresh strawberries, sliced
  • 15.25 oz yellow cake mix
  • 1/2 cup graham cracker crumbs
  • 3/4 cup unsalted butter, chilled and sliced into thin pats

Instructions:

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.
  2. Spread the 21 oz strawberry pie filling across the bottom of the prepared dish. Evenly scatter the 1 cup of sliced fresh strawberries over the filling.
  3. In a medium mixing bowl, use a hand mixer to beat the 8 oz softened cream cheese, 1 egg, 1/4 cup granulated sugar, and 1 tsp vanilla extract until smooth and aerated.
  4. Drop spoonfuls of the cheesecake mixture evenly over the strawberry layer.
  5. In a small bowl, whisk together the 15.25 oz yellow cake mix and 1/2 cup graham cracker crumbs. Sprinkle this mixture uniformly over the fruit and cheesecake layers.
  6. Place the 3/4 cup of chilled butter pats across the entire surface of the cake mix, ensuring maximum coverage to avoid dry spots.
  7. Bake for 45 minutes, or until the top is golden brown and the fruit filling is bubbling at the edges.
