Ingredients:

  • 1 lb imitation crab meat, chopped or flaked
  • 1/2 cup celery, finely diced
  • 3 tbsp red onion, minced
  • 2 tbsp fresh parsley, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tsp Old Bay seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Dice the celery and red onion into uniform, small pieces. Flake the imitation crab by hand or with a knife into bite-sized chunks.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, Old Bay, salt, and pepper until smooth.
  3. Combine the crab, celery, onion, and parsley in a large mixing bowl. Pour the dressing over the top and gently fold from the bottom up until evenly coated.
  4. Transfer the salad to an airtight container and refrigerate for at least 2 hours to allow flavors to meld and texture to firm up.
