Ingredients:
- 1 lb imitation crab meat, chopped or flaked
- 1/2 cup celery, finely diced
- 3 tbsp red onion, minced
- 2 tbsp fresh parsley, chopped
- 1/2 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Old Bay seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Dice the celery and red onion into uniform, small pieces. Flake the imitation crab by hand or with a knife into bite-sized chunks.
- In a separate small bowl, whisk together the mayonnaise, lemon juice, Old Bay, salt, and pepper until smooth.
- Combine the crab, celery, onion, and parsley in a large mixing bowl. Pour the dressing over the top and gently fold from the bottom up until evenly coated.
- Transfer the salad to an airtight container and refrigerate for at least 2 hours to allow flavors to meld and texture to firm up.
