- 4 oz feta cheese, crumbled
Instructions:
- Place the cut heirloom and cherry tomatoes in a bowl, sprinkle with a pinch of salt, and let sit for 2 minutes to draw out excess moisture.
- Combine the olive oil, red wine vinegar, honey, salt, and pepper in a small jar. Shake vigorously for 15 seconds until emulsified.
- Add the sliced red onions and torn basil to the tomatoes.
- Pour the dressing over the vegetables and toss gently to combine.
- Fold in the crumbled feta cheese last to maintain distinct, creamy pockets.
