Ingredients:

  • 1.5 lbs heirloom tomatoes, cut into wedges
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup fresh basil leaves, torn
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp honey
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 4 oz feta cheese, crumbled

Instructions:

  1. Place the cut heirloom and cherry tomatoes in a bowl, sprinkle with a pinch of salt, and let sit for 2 minutes to draw out excess moisture.
  2. Combine the olive oil, red wine vinegar, honey, salt, and pepper in a small jar. Shake vigorously for 15 seconds until emulsified.
  3. Add the sliced red onions and torn basil to the tomatoes.
  4. Pour the dressing over the vegetables and toss gently to combine.
  5. Fold in the crumbled feta cheese last to maintain distinct, creamy pockets.
