Ingredients:

  • 1 tablespoon (15 ml) unsalted butter
  • 2 large eggs
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Melt butter in a non-stick skillet over medium heat. Ensure the entire pan is coated.
  2. Gently crack the eggs into the skillet, keeping them separated.
  3. Cook for 2-3 minutes, or until the whites are mostly set but the yolks are still runny. Watch closely!
  4. Gently slide the spatula under one egg and flip it quickly.
  5. Cook the second side for 15-30 seconds for an over-easy yolk (very runny). Longer for over-medium (slightly thicker yolk).
  6. Season with salt and pepper. Carefully slide the eggs onto a plate.
