Ingredients:
- 1 tablespoon (15 ml) unsalted butter
- 2 large eggs
- Salt and freshly ground black pepper to taste
Instructions:
- Melt butter in a non-stick skillet over medium heat. Ensure the entire pan is coated.
- Gently crack the eggs into the skillet, keeping them separated.
- Cook for 2-3 minutes, or until the whites are mostly set but the yolks are still runny. Watch closely!
- Gently slide the spatula under one egg and flip it quickly.
- Cook the second side for 15-30 seconds for an over-easy yolk (very runny). Longer for over-medium (slightly thicker yolk).
- Season with salt and pepper. Carefully slide the eggs onto a plate.
