Ingredients:

  • 10 large lemons, preferably organic and unwaxed
  • 750 ml vodka, 80-100 proof (40-50% ABV)
  • 3 cups water
  • 2 1/4 cups granulated sugar

Instructions:

  1. Carefully peel the lemons, removing only the zest (the yellow part) and avoiding the white pith.
  2. Place the lemon zest in a clean glass jar and pour the vodka over it. Seal the jar tightly and store it in a cool, dark place for 3-6 weeks. Shake the jar gently every few days.
  3. Combine the water and sugar in a saucepan. Heat over medium heat, stirring until the sugar is completely dissolved. Bring to a simmer for 1 minute. Remove from heat and let cool completely.
  4. After the infusion period, strain the vodka mixture through a fine-mesh strainer (lined with cheesecloth, if desired) to remove the lemon zest.
  5. Add the cooled simple syrup to the infused vodka. Stir well to combine. Pour the limoncello into clean bottles and seal.
  6. Refrigerate the limoncello for at least a few hours before serving. Serve chilled or over ice.
