Ingredients:
- 2 lbs sweet potatoes
- 2 tbsp cornstarch
- 3 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 1 tsp fine sea salt
- 0.5 tsp cracked black pepper
Instructions:
- Peel the sweet potatoes and cut them into uniform sticks, roughly 1/4 inch thick. Soak the cut fries in a bowl of cold water for 30 minutes to remove excess starch. This step is optional but recommended.
- Drain the fries and pat them completely dry with a lint-free kitchen towel. Ensure they are bone-dry to prevent steaming.
- Place the dry fries in a large mixing bowl. Sprinkle with 2 tablespoons of cornstarch and toss vigorously until every fry is coated in a thin, white film.
- Drizzle with olive oil and add the smoked paprika, garlic powder, onion powder, and black pepper. Toss until the starch is absorbed and fries are glossy.
- Preheat oven to 425°F (220°C). Spread fries in a single layer across two baking sheets, ensuring no fries are touching.
- Bake for 15 minutes, then flip the fries and bake for another 10 minutes, until the edges are caramelized and the exterior is crisp. Season with sea salt immediately after removing from the oven.
