Ingredients:

  • 4 medium sweet potatoes (about 2 lbs / 900 g)
  • ½ cup (100 g) packed brown sugar
  • 1/4 cup (60 ml) unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup (60 ml) water
  • Optional: mini marshmallows for topping

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Peel and slice the sweet potatoes into 1/2-inch rounds or cubes.
  3. In a saucepan, combine butter, brown sugar, cinnamon, nutmeg, and salt over medium heat, stirring until melted and combined.
  4. Stir in water and bring the mixture to a gentle simmer.
  5. Arrange sweet potatoes in the baking dish and pour the syrup over them.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil and bake for an additional 15 minutes, basting occasionally with the sauce until sweet potatoes are tender and syrup thickens.
  8. (Optional) About 5 minutes before finishing, sprinkle mini marshmallows on top and return to oven until melted and golden.
