Ingredients:

  • 2 (6 oz / 170g) salmon fillets
  • 1 tablespoon / 15ml olive oil
  • 1/2 teaspoon / 2.5ml sea salt
  • 1/4 teaspoon / 1.25ml black pepper
  • 1 sprig fresh thyme (optional)
  • 1 lemon slice (optional)
  • 1 clove garlic, minced (optional)

Instructions:

  1. Pat salmon fillets dry with paper towels.
  2. Drizzle salmon with olive oil, and season generously with salt, pepper, garlic (if using), thyme (if using), and lemon (if using).
  3. Place salmon fillets in the zip-top bag in a single layer.
  4. Seal the bag, leaving a small opening. Submerge in water to remove air. Seal completely.
  5. Preheat oven to 275°F / 135°C. Check with an oven thermometer for accuracy.
  6. Place the bag in the baking dish and bake for 20-25 minutes, or until the internal temperature of the salmon reaches 125°F / 52°C (for medium-rare) or 130°F / 54°C (for medium).
  7. Use a meat thermometer to verify internal temperature.
  8. Carefully remove the salmon from the bag. Serve immediately.
