Ingredients:
- 4 large artichokes (about 1 lb each)
- 1 lemon, cut in half (for juice and zest)
- 2 cloves of garlic, minced
- 1 cup (240 ml) vegetable broth or water
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions:
- Trim stems and outer leaves to remove tough parts. Cut the top off the artichokes and remove any small, thorny tips with scissors. Rub cut areas with lemon to prevent browning.
- In a bowl, mix olive oil, minced garlic, salt, and pepper. Using a brush or spoon, generously coat the artichokes with the oil mixture (inside and out).
- Pour the vegetable broth (or water) into the Instant Pot. Place a trivet or steamer insert in the pot and arrange the artichokes above it. Squeeze lemon juice over the artichokes, then place lemon halves in the pot.
- Close the lid and set to 'Steam' for 15 minutes on high pressure. Allow natural release for 5 minutes, then quick release any remaining pressure.
- Carefully remove the artichokes and let them cool slightly before serving. Serve warm with dipping sauces like melted butter or aioli.
