Ingredients:

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon sweet pickle relish
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Pinch of paprika for garnish (optional)

Instructions:

  1. Place eggs in a saucepan, cover with cold water, bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes.
  2. Drain the hot water, rinse with cold water until eggs are cool enough to handle.
  3. Gently crack and peel the eggs.
  4. Chop the eggs into desired size pieces (using a knife or egg slicer).
  5. In a mixing bowl, combine chopped eggs, mayonnaise, mustard, pickle relish, celery, red onion, salt, and pepper.
  6. Gently mix all ingredients until well combined. Avoid overmixing.
  7. Cover and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with paprika (optional) before serving.
