Ingredients:
- 6 large eggs
- 1/4 cup mayonnaise
- 2 tablespoons yellow mustard
- 1 tablespoon sweet pickle relish
- 1/4 cup finely chopped celery
- 2 tablespoons finely chopped red onion
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Pinch of paprika for garnish (optional)
Instructions:
- Place eggs in a saucepan, cover with cold water, bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes.
- Drain the hot water, rinse with cold water until eggs are cool enough to handle.
- Gently crack and peel the eggs.
- Chop the eggs into desired size pieces (using a knife or egg slicer).
- In a mixing bowl, combine chopped eggs, mayonnaise, mustard, pickle relish, celery, red onion, salt, and pepper.
- Gently mix all ingredients until well combined. Avoid overmixing.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld. Garnish with paprika (optional) before serving.
