Ingredients:

  • 1 cup (2 sticks/227g) unsalted butter, softened
  • 3-4 cups (360-480g) powdered sugar, sifted
  • 1/4 cup (60ml) milk or heavy cream
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions:

  1. In a large mixing bowl, beat the softened butter with an electric mixer on medium speed until light and fluffy (about 3-5 minutes). The butter should be noticeably lighter in color and texture.
  2. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed after each addition. Start with 3 cups and add more to reach your desired consistency.
  3. Add the milk (or cream), vanilla extract, and salt. Beat on medium speed until smooth and creamy. If the frosting is too thick, add more milk, a teaspoon at a time. If it's too thin, add more powdered sugar, a tablespoon at a time.
  4. Increase the mixer speed to high and beat for 1-2 minutes until the frosting is light and airy. The frosting should become noticeably lighter and more voluminous.
  5. Taste and adjust sweetness, vanilla flavor, or consistency as needed. Add a drop or two of food coloring at this stage if desired.
