Ingredients:
- 1 large English cucumber (about 12 oz / 340g), thinly sliced
- 1/4 cup (60ml) rice vinegar
- 2 tablespoons (30ml) water
- 1 tablespoon (15ml) granulated sugar
- 1 teaspoon (5ml) salt (or to taste)
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon finely chopped fresh dill (or 1 teaspoon dried dill)
- Optional: 1/4 small red onion, thinly sliced (for a bit of oomph)
Instructions:
- Slice the cucumber thinly (either by hand or using a mandoline – watch your fingers!).
- In a mixing bowl, whisk together the rice vinegar, water, sugar, salt, and pepper until the sugar is dissolved.
- Add the sliced cucumber, dill, and red onion (if using) to the dressing. Toss to coat evenly.
- Cover the bowl and refrigerate for at least 20 minutes to allow the flavours to meld. Serve chilled.
