Ingredients:

  • 1 large English cucumber (about 12 oz / 340g), thinly sliced
  • 1/4 cup (60ml) rice vinegar
  • 2 tablespoons (30ml) water
  • 1 tablespoon (15ml) granulated sugar
  • 1 teaspoon (5ml) salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped fresh dill (or 1 teaspoon dried dill)
  • Optional: 1/4 small red onion, thinly sliced (for a bit of oomph)

Instructions:

  1. Slice the cucumber thinly (either by hand or using a mandoline – watch your fingers!).
  2. In a mixing bowl, whisk together the rice vinegar, water, sugar, salt, and pepper until the sugar is dissolved.
  3. Add the sliced cucumber, dill, and red onion (if using) to the dressing. Toss to coat evenly.
  4. Cover the bowl and refrigerate for at least 20 minutes to allow the flavours to meld. Serve chilled.
