Ingredients:

  • 2 slices sourdough bread (about 1/2 inch thick)
  • 2 tablespoons unsalted butter, softened (30g)
  • 2 ounces (55g) sharp cheddar cheese, grated
  • 1 ounce (30g) Gruyere cheese, grated (optional)

Instructions:

  1. Lightly butter one side of each slice of bread with the softened butter. Make sure to get right to the edges.
  2. Place one slice of bread, butter-side down, in the skillet. Evenly distribute the grated cheddar and Gruyere (if using) over the bread. Top with the second slice of bread, butter-side up.
  3. Place the skillet over medium-low heat. Cook for 4-6 minutes per side, or until the bread is golden brown and the cheese is completely melted and gooey. Gently press down on the sandwich with a spatula to ensure even browning.
  4. Remove from the skillet, slice in half (diagonally, for that extra touch of fancy), and serve immediately.
