Ingredients:
- 2 slices of bread (sourdough, country white, or brioche)
- 1 tablespoon (14g) unsalted butter, softened
- 1/4 cup (approximately 60g) shredded cheese (cheddar, Monterey Jack, Gruyere)
- Optional: A thin smear of mayonnaise
Instructions:
- Evenly spread softened butter on one side of each slice of bread. If using mayonnaise, lightly spread a thin layer on the opposite side.
- Place one slice of bread, butter-side down (or mayo-side down!), in the skillet. Evenly distribute the shredded cheese over the bread. Top with the second slice of bread, butter-side up (or mayo-side up!).
- Place the skillet over medium-low heat. Cook for 4-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is completely melted and gooey. Gently press down on the sandwich with the spatula.
- The sandwich is done when the bread is golden brown and the cheese is fully melted and stretchy.
- Carefully remove the grilled cheese from the skillet and transfer to a cutting board. Cut in half and serve immediately while the cheese is still hot and gooey.
