Ingredients:

  • 2 slices of bread (sourdough, country white, or brioche)
  • 1 tablespoon (14g) unsalted butter, softened
  • 1/4 cup (approximately 60g) shredded cheese (cheddar, Monterey Jack, Gruyere)
  • Optional: A thin smear of mayonnaise

Instructions:

  1. Evenly spread softened butter on one side of each slice of bread. If using mayonnaise, lightly spread a thin layer on the opposite side.
  2. Place one slice of bread, butter-side down (or mayo-side down!), in the skillet. Evenly distribute the shredded cheese over the bread. Top with the second slice of bread, butter-side up (or mayo-side up!).
  3. Place the skillet over medium-low heat. Cook for 4-5 minutes per side, or until the bread is golden brown and crispy, and the cheese is completely melted and gooey. Gently press down on the sandwich with the spatula.
  4. The sandwich is done when the bread is golden brown and the cheese is fully melted and stretchy.
  5. Carefully remove the grilled cheese from the skillet and transfer to a cutting board. Cut in half and serve immediately while the cheese is still hot and gooey.
