Ingredients:
- 16 ounces (450g) Refried Beans (canned or homemade)
- 1 packet (approx. 1 ounce/28g) Taco Seasoning (or homemade blend)
- 3 medium Avocados, pitted and mashed
- 1/4 cup (60ml) Red Onion, finely diced
- 1/4 cup (60ml) Cilantro, chopped
- 1-2 tablespoons (15-30ml) Lime Juice (freshly squeezed is best!)
- 1/4 teaspoon (1.25ml) Salt
- 1/4 teaspoon (1.25ml) Black Pepper
- 1 pound (450g) Ground Beef (80/20 blend)
- 1/2 cup (120ml) Water
- 16 ounces (450g) Sour Cream
- 1 packet (approx. 1 ounce/28g) Ranch Dressing Mix
- 16 ounces (450g) Salsa (your favorite brand and heat level)
- 2 cups (200g) Cheddar Cheese, shredded (sharp or medium)
- 1/2 cup (75g) Black Olives, sliced
- 1/4 cup (30g) Green Onions, thinly sliced
- 1/4 cup (30g) Jalapeños, sliced (optional, for extra kick!)
Instructions:
- Spread refried beans evenly across the bottom of the serving dish. Sprinkle with taco seasoning.
- In a bowl, mash avocados. Add red onion, cilantro, lime juice, salt, and pepper. Mix well. Spread evenly over the bean layer.
- If using, brown ground beef in a skillet over medium heat. Drain off any excess fat. Stir in water and taco seasoning. Simmer until thickened, about 5 minutes. Let cool slightly, then spread over the guacamole layer.
- In a bowl, combine sour cream and ranch dressing mix. Spread evenly over the guacamole or beef layer.
- Carefully spread salsa evenly over the sour cream layer.
- Sprinkle shredded cheddar cheese evenly over the salsa.
- Garnish with sliced black olives, green onions, and jalapeños (if desired).
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
