- Salt and freshly ground black pepper to taste
- 1 large Italian roll (about 12 inches/30cm long), sliced horizontally
- 2 tablespoons mayonnaise (30ml), optional
- 4 ounces (113g) thinly sliced Genoa salami
- 4 ounces (113g) thinly sliced capicola (or other spicy cured ham)
- 4 ounces (113g) thinly sliced provolone cheese
- 1/2 cup shredded iceberg lettuce (about 50g)
- 1/4 cup thinly sliced red onion (about 25g)
- 1/4 cup thinly sliced ripe tomato (about 25g)
- 1/4 cup pickled hot peppers (such as banana peppers or pepperoncini), sliced (about 25g)
Instructions:
- Make the Vinaigrette: In a small bowl, whisk together the red wine vinegar, olive oil, oregano, garlic powder, and red pepper flakes. Season with salt and pepper to taste.
- Prepare the Roll: Slice the Italian roll horizontally. If desired, spread a thin layer of mayonnaise on both halves.
- Layer the Meats and Cheese: On the bottom half of the roll, layer the Genoa salami, capicola, and provolone cheese.
- Add the Veggies: Top the meats and cheese with shredded lettuce, red onion, tomato, and pickled hot peppers.
- Drizzle with Vinaigrette: Generously drizzle the vinaigrette over the vegetables and meats.
- Assemble the Sandwich: Carefully place the top half of the roll over the filling.
- Slice and Serve: Slice the sandwich in half or into smaller portions. Serve immediately.
