  • 1 cup (120g) rolled oats, old-fashioned or quick-cooking
  • 1 cup (240ml) milk, dairy or non-dairy
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 tablespoon (12.5g) granulated sugar
  • 1 cup (120g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Optional: 1/4 cup (40g) blueberries or chocolate chips

Instructions:

  1. In a large bowl, whisk together rolled oats, milk, egg, melted butter, and vanilla extract. Let sit for 5 minutes to soften the oats.
  2. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix; a few lumps are okay.
  4. Preheat a griddle or large non-stick frying pan over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
