- 1 cup (120g) rolled oats, old-fashioned or quick-cooking
- 1 cup (240ml) milk, dairy or non-dairy
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- 1 tablespoon (12.5g) granulated sugar
- 1 cup (120g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Optional: 1/4 cup (40g) blueberries or chocolate chips
Instructions:
- In a large bowl, whisk together rolled oats, milk, egg, melted butter, and vanilla extract. Let sit for 5 minutes to soften the oats.
- In a separate bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
- Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix; a few lumps are okay.
- Preheat a griddle or large non-stick frying pan over medium heat. Lightly grease with butter or cooking spray.
- Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through.
