Ingredients:

  • 4 medium sweet potatoes (about 8 oz/225g each), scrubbed clean
  • 1 tablespoon olive oil (15 ml)
  • 1/2 teaspoon kosher salt (3g)
  • 1/4 teaspoon black pepper (1g)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash sweet potatoes. Pierce each potato several times with a fork.
  3. Rub sweet potatoes with olive oil, salt, and pepper. Ensure they are evenly coated.
  4. Place sweet potatoes directly on the baking sheet. Bake for 45-75 minutes, or until a fork easily pierces the center.
  5. Let cool slightly before handling. Slice open and serve.
