Ingredients:
- 4 medium sweet potatoes (about 8 oz/225g each), scrubbed clean
- 1 tablespoon olive oil (15 ml)
- 1/2 teaspoon kosher salt (3g)
- 1/4 teaspoon black pepper (1g)
Instructions:
- Preheat oven to 400°F (200°C).
- Wash sweet potatoes. Pierce each potato several times with a fork.
- Rub sweet potatoes with olive oil, salt, and pepper. Ensure they are evenly coated.
- Place sweet potatoes directly on the baking sheet. Bake for 45-75 minutes, or until a fork easily pierces the center.
- Let cool slightly before handling. Slice open and serve.
