Ingredients:
- 1 lb 99% lean ground turkey
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 14 oz pre-shredded coleslaw mix (cabbage and carrots)
- 3 cloves garlic, finely minced
- 1 tbsp fresh ginger, grated
- 1/2 cup scallions, thinly sliced (whites and greens separated)
- 1/2 cup matchstick carrots
- 3 tbsp low-sodium soy sauce
- 1 tsp toasted sesame oil
- 1 tsp rice vinegar
- 1 tsp sriracha
Instructions:
- Heat a large skillet over medium high heat. Add the ground turkey, sea salt, and black pepper.
- Cook 5-6 mins until no pink remains.
- Add the white parts of the scallions, garlic, and ginger to the meat. Sauté 1 min until fragrant and sizzling.
- In a small bowl, combine the 3 tbsp low sodium soy sauce, 1 tsp rice vinegar, and 1 tsp sriracha.
- Pour the prepared soy sauce mixture over everything. Toss for 2 mins until the cabbage just starts to soften.
- Remove the pan from the heat and drizzle with 1 tsp toasted sesame oil.
- Top with the green scallion slices and extra sriracha if you want more heat.
