Ingredients:

  • 1 lb 99% lean ground turkey
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 14 oz pre-shredded coleslaw mix (cabbage and carrots)
  • 3 cloves garlic, finely minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup scallions, thinly sliced (whites and greens separated)
  • 1/2 cup matchstick carrots
  • 3 tbsp low-sodium soy sauce
  • 1 tsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1 tsp sriracha

Instructions:

  1. Heat a large skillet over medium high heat. Add the ground turkey, sea salt, and black pepper.
  2. Cook 5-6 mins until no pink remains.
  3. Add the white parts of the scallions, garlic, and ginger to the meat. Sauté 1 min until fragrant and sizzling.
  4. In a small bowl, combine the 3 tbsp low sodium soy sauce, 1 tsp rice vinegar, and 1 tsp sriracha.
  5. Pour the prepared soy sauce mixture over everything. Toss for 2 mins until the cabbage just starts to soften.
  6. Remove the pan from the heat and drizzle with 1 tsp toasted sesame oil.
  7. Top with the green scallion slices and extra sriracha if you want more heat.
