Ingredients:

  • 1 loaf (1 lb/450g) Italian or French bread, unsliced
  • ½ cup (1 stick/113g) unsalted butter, melted
  • 4 cloves garlic, minced (approx. 1 tbsp)
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups (8 oz/225g) shredded mozzarella cheese
  • ½ cup (2 oz/55g) shredded Parmesan cheese

Instructions:

  1. Cut the bread lengthwise, almost all the way through (leaving the bottom crust intact). Then cut crosswise, creating a grid pattern of squares.
  2. In a mixing bowl, combine the melted butter, minced garlic, parsley, garlic powder, salt, and pepper.
  3. Brush the garlic butter generously all over the bread, ensuring it gets into the cuts.
  4. Stuff the shredded mozzarella and Parmesan cheese into the cuts of the bread, distributing it evenly.
  5. Place the bread on a baking sheet lined with parchment paper (if desired). Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly and the bread is golden brown.
  6. Let the bread cool slightly before pulling apart and serving.
