Ingredients:

  • 1 ¾ cups Low-Moisture Mozzarella, shredded
  • 4 tbsp Cream Cheese, cubed
  • 1 ½ cups Superfine Almond Flour
  • ¼ cup Erythritol or Monk Fruit Sweetener blend
  • 2 tsp Baking Powder
  • 1 large Egg, whisked
  • 1 tsp Vanilla Extract
  • 4 tbsp Butter, softened
  • ¼ cup Brown Swerve or preferred sweetener blend (for filling)
  • 1 tbsp Ground Cinnamon
  • 4 oz Cream Cheese, softened (for glaze)
  • ½ cup Powdered Erythritol/Monk Fruit (sieved)
  • 2–3 tbsp Heavy Whipping Cream or Almond Milk
  • ½ tsp Vanilla Extract (for glaze)

Instructions:

  1. Prepare the Fathead Base: Combine shredded mozzarella and cubed cream cheese in a microwave-safe bowl. Microwave on high for 60-90 seconds until fully melted and gooey. Stir until a uniform, sticky mass forms.
  2. Combine Wet and Dry Ingredients: Allow the melted cheese mixture to cool for 2–3 minutes (it should be warm, but not scorching hot). Incorporate the egg and vanilla extract, mixing rapidly.
  3. Form the Dough: In a separate bowl, whisk together the almond flour, baking powder, and sweetener. Add the dry ingredients to the cheese mixture and mix vigorously until a cohesive, smooth dough ball forms. If the dough is too sticky to handle, chill briefly (5–10 minutes).
  4. Roll and Spread the Filling: Place the dough between two large sheets of parchment paper. Use a rolling pin to flatten the dough into a uniform rectangle, approximately 12x8 inches (30x20 cm) and about ⅓ inch thick.
  5. Create the Cinnamon Layer: In a small bowl, mix the softened butter, cinnamon, and brown sweetener until a smooth paste forms. Spread the filling evenly over the dough rectangle, leaving a small, 1-inch border on one of the long edges.
  6. Roll and Slice: Starting from the long edge opposite the clean border, tightly roll the dough into a log. Use dental floss or a very sharp knife to slice the log into 8 equal pieces.
  7. Bake: Arrange the rolls, cut side up, into a prepared 9x9 inch baking dish lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for 18–20 minutes, or until the tops are set and lightly golden brown.
  8. Prepare and Apply Glaze: While the rolls cool slightly, beat the softened cream cheese, powdered sweetener, vanilla, and heavy cream until completely smooth and thick.
  9. Finish and Serve: Drizzle or spread the cream cheese glaze generously over the warm rolls. Serve immediately.
