Ingredients:
- 4 cups (600 g) Seedless Watermelon, cubed
- 1 Tbsp Fresh Lime Juice (for the purée)
- 3 fl oz (90 mL) Blanco (Silver) Tequila, 100% Agave
- 6 fl oz (180 mL) Fresh Watermelon Juice (strained and chilled)
- 5 fl oz (45 mL) Fresh Lime Juice
- 5 – 1 fl oz (15 – 30 mL) Agave Nectar or Simple Syrup
- Ice Cubes, as needed
- 2 Tbsp Coarse Sea Salt or Margarita Salt (for rim)
- 2 Lime Wedges (for rim and garnish)
Instructions:
- Prepare and Chill the Watermelon Juice: Add the cubed watermelon and 1 Tbsp of lime juice into the blender. Blend until completely smooth.
- Strain: Pour the purée through a fine-mesh sieve set over a large bowl. Use the back of a spoon to gently press the solids and extract as much liquid as possible. Discard the remaining pulp. Measure out 6 fl oz (180 mL) of the fresh juice.
- Chill: Transfer the measured watermelon juice to the refrigerator and chill for a minimum of 30 minutes. Cold juice is crucial to prevent excessive ice melt when shaking.
- Prepare the Glasses: Pour the salt onto a small, flat plate. Run a lime wedge around the rim of your serving glasses. Dip the wet rim gently into the salt mixture to ensure an even coating.
- Ice: Fill the prepared glasses generously with fresh ice.
- Assemble and Shake: Fill a cocktail shaker about two-thirds full with ice. Add the Tequila (3 fl oz), the chilled Watermelon Juice (6 fl oz), the Fresh Lime Juice (1.5 fl oz), and the Agave Nectar (start with 0.5 fl oz).
- Shake: Secure the lid tightly and shake vigorously for 15–20 seconds until the shaker is thoroughly frosted on the outside—this indicates proper chilling.
- Serve: Strain the mixture evenly between the two prepared, ice-filled glasses. Garnish each with a fresh lime wheel or watermelon wedge and serve immediately.
