Ingredients:
- 4 slices of sourdough bread (or white bread)
- 4 slices of sharp cheddar cheese (or Gruyère)
- 2 tablespoons unsalted butter
- 1 tablespoon mayonnaise (optional for extra flavour)
Instructions:
- Spread butter evenly on one side of each slice of bread. If using, spread mayonnaise on the unbuttered side for extra flavour.
- Place two slices of bread, buttered side down, in the skillet. Layer two slices of cheese on top, followed by the remaining bread slices, buttered side up.
- Heat the skillet over medium-low heat. Cook for 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich, using the spatula, and cook on the other side for another 3-4 minutes or until cheese is melted and bread is golden.
- Remove the sandwich from the skillet, let it cool slightly, then slice in half and serve warm.
