Ingredients:

  • 4 slices of sourdough bread (or white bread)
  • 4 slices of sharp cheddar cheese (or Gruyère)
  • 2 tablespoons unsalted butter
  • 1 tablespoon mayonnaise (optional for extra flavour)

Instructions:

  1. Spread butter evenly on one side of each slice of bread. If using, spread mayonnaise on the unbuttered side for extra flavour.
  2. Place two slices of bread, buttered side down, in the skillet. Layer two slices of cheese on top, followed by the remaining bread slices, buttered side up.
  3. Heat the skillet over medium-low heat. Cook for 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich, using the spatula, and cook on the other side for another 3-4 minutes or until cheese is melted and bread is golden.
  4. Remove the sandwich from the skillet, let it cool slightly, then slice in half and serve warm.
