Ingredients:
- 1 cup (150g) fresh organic strawberries, stems intact
- 1/2 cup (75g) fresh raspberries
- 1/2 cup (75g) fresh blackberries or blueberries
- 1 tbsp (15ml) fresh mint leaves
- 3.5 oz (100g) 70% dark chocolate bar, broken into shards
- 1/4 cup (30g) Marcona almonds
- 1/2 cup (60g) grain-free or seed-based crackers
- 4 oz (115g) herbed goat cheese or small wheel of Camembert
- 2 tbsp (30ml) raw honey or balsamic glaze reduction
Instructions:
- Place the cheese. Position the herbed goat cheese slightly off center to create a focal point.
- Anchor the bowls. Set your honey ramekin on the opposite side to balance the weight.
- Arrange the crackers. Fan the crackers out in a curving S shape starting from the cheese.
- Cluster the strawberries. Group them in two separate piles until they look like a natural bounty.
- Shatter the chocolate. Break the bar into large shards and tuck them near the cheese and almonds.
- Fill with berries. Drop the raspberries and blackberries into the remaining open spaces.
- Add the crunch. Sprinkle the Marcona almonds into the small nooks between the fruit.
- Drizzle the honey. Pour the honey into its bowl until it glows like liquid amber.
- Garnish with mint. Tuck the leaves into the fruit clusters until the green pops.
- Final check. Step back and ensure no wood is showing for a lush, abundant appearance.
